    Guided northern lights and winter tours in sub-zero conditions. Most of the job was managing uncertainty—weather, people, expectations—and keeping things steady when nothing was guaranteed.

    Winter 2025–26

    Worked grill and plating in a fine-dining kitchen. High volume, constant pressure, and no room for mistakes. Built a foundation in basic kitchen techniques and learned how much consistency matters when everything moves fast.

    One Way Campers — Sydney, Australia

    Early 2025

    Built out camper vans from scratch—insulation, wiring, interiors. Early days were messy: sourcing parts, fixing mistakes, figuring things out as we went, including marketing and advertising to get the vans rented.

  • Cellar Hand

    Mas de Daumas Gassac — France

    Harvest 2023 & 2024

    Worked the grape harvest and cellar. Early mornings, long days, repetitive work. Everything depended on timing—weather, ripeness, and decisions that couldn’t be undone.
